Vegetarian friendly

A super simple, quick and easy recipe! Delicious and healthy!

What you'll need:

  • 300 ml vegetable stock
  • 750g sweet potato, chopped
  • 1 onion, chopped
  • 250g spinach
  • 2 garlic cloves, thinly sliced
  • 1 red chilli, thinly sliced
  • 1 tbsp curry powder
  • 400g passata
  • salt & ground pepper

Add sweet potatoes, onion and vegetable stock to a sauce pan and bring to the boil. Reduce heart and cook for 5 minutes. Add spinach, garlic, chilli, curry powder and passata. Stir well and cook for 10 minutes or until sweet potato and spinach have cooked through.

Add Greek yoghurt if it is too spicy! Serve with coconut rice.

  4. Mm, yes! I love going out for Indian food because they always have vegetarian food with flavor, but I'm sure it would be way cheaper to just learn how to cook some dishes myself
